Job Description

The Regional Food and Beverage Director supports food and beverage operations in

 various locations based on the business need and assignment. They will ensure the quality of food, beverage, and service is consistent with company guidelines, the operation is profitable, and assist in developing strategic operation plans that align with the client?s missions, vision and objectives.

They will work with the Regional Culinary Directors and OpX leaders to plan, execute and audit programs and Standardized Operating Plans that the line of business has implemented. This position will have no direct reports; however they will support and influence property level food and beverage staff in this position.

Travel Schedule will remain flexible with a few different variations that will be assigned by their manager based on business needs. Position could work holidays and weekends.

  • 5 days on, 2 days off
  • 14 days on, 6 days off. Day 1 and day 14 are travel days
  • 21 days on, 8 days off. Day 1 and day 21 are travel day

This person will reside in Eastern or Central time zones.

Job Responsibilities

  • Coach and train team members while onsite as necessary.
  • Coordinate and supervise property personnel as needed
  • Maintain a strong culinary and beverage trends and present to OpX leaders.
  • Ensure perfect purchasing is met at every location.
  • Observe and analyze the operation and make recommendations to property level management and above. This could include, but no limited to, line setup, steps of service, staffing levels, menu writing, POS efficiencies, equipment and smallwares conditions and levels, etc.
  • Inspect inventory levels, ingredients and menus are meeting the LOB Standards for both food and beverage menus
  • Support Food and Beverage staff in open/closes or ramp up/ramp downs activities
  • Review NPS Audits and Steritech results and assist in developing corrective actions plans and follow ups to hold operators accountable.
  • Assist in maintain Prima, Enable, Birchstreet, Micros, and other tech solutions in the region.
  • Lead operational teams on how to implement Line of Business standards and programs
  • Complete an OpX Walkthrough
  • Complete Food Safety Internal audits
  • Conduct interviews and participate in chef tasting interviews as assigned
  • Assist in menu writing, costing, adding nutritional information, pricing and procuring ingredients for food and beverage.
  • Assist in designing concepts and merchandising techniques
  • Interact and communicate with clients as needed
  • Lead teams through a safety culture
  • Must be well groomed and maintain a high level of professionalism at all times
  • Must perform duties assigned by manager
  • Know and follow all company policies and procedures regarding safety, security, emergencies and sustainability.
  • Report to work on time and in complete uniform
  • Other duties as assigned
  • Must book all travel through internal booking system. Must stay organized and submit expense reports accurately and in a timely manner

Qualifications

  • Geographically located on the in the region they work for travel purposes
  • Must complete Serve Safe Food Handlers certification
  • Must complete TIPS alcohol service certification
  • Must be fluent in the English language both spoken and written ? able to read & interpret documents such as safety rules, ARAMARK Alcohol Regulations, operating and maintenance instructions and procedure manuals
  • This position requires a minimum formal education of a Bachelor?s degree.
  • Must have at least 8 years? experience in working in a high-volume food and beverage operation
  • Must have an extensive knowledge of cooking methods, cooking line, banquets, catering, and pastry
  • Must have knowledge about front of house service in casual ? upscale dining
  • Ability to lead in a diverse environment with focus on client and customer services is critical to success in this role
  • Demonstrated supervisory, interpersonal and time management skills are required
  • P&L accountability and/or contract-managed service experience is required
  • Experience with and knowledge of all Microsoft Outlook applications required
